(MAKES 4 1⁄2 CUP SERVINGS)

Ingredients

  • 2-14oz. (400 g.) cans whole kernel sweet corn
  • 1 red bell pepper
  • 3 scallions (spring onions)
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt

Instructions

  1. Drain canned corn
  2. Finely dice bell pepper
  3. Finely slice the scallions on a diagonal angle
  4. Combine all ingredients in a serving bowl

Tip: You can use fresh or frozen sweet corn for this recipe. To defrost frozen corn simply run hot water over it for about 30 seconds. You do not need to cook it.
